Preheat oven to 425 F. Wash and dry @sweet potato{1%unit}, @red grapes{1%unit}, and @kale{1%unit}.

While sweet potato roasts, pat @chicken cutlets{10%oz} dry with paper towels. Season all over with @fry seasoning{1%tbsp}, @salt{0.5%tsp}, and @black pepper{0.5%tsp}.

Place kale in a #large bowl{}. Add a drizzle of @olive oil{1%tbsp}. Lightly season with a pinch of salt. Using your hands, massage kale until leaves are dark green and tender ~{2%minutes}.

Slice chicken crosswise.

Assemble remaining components using @feta cheese{2%oz}, @cashews{1%tbsp}, @balsamic vinegar{1%tbsp}, @dijon mustard{1%tsp}, @sugar{1%tsp}, and @cooking oil{1%tbsp}.
